"mainText": "Ban Chuan is a popular dry-stirred noodle dish and a specialty snack in the Hangzhou and Shanghai areas. Ban Chuan comes with a rich variety of toppings, with common versions including Shrimp and Eel Ban Chuan, Shrimp and Kidney Ban Chuan, Beef Brisket Ban Chuan, Pork Liver Ban Chuan, Shredded Pork Ban Chuan, and Tomato Sauce Ban Chuan. To prepare it, the ingredients are first stir-fried, then the noodles are added to the wok and mixed until fragrant. This method highlights the Hangzhou-style emphasis on toppings over the noodles themselves, resulting in a very aromatic dish. Compared to most Hangzhou dishes, Ban Chuan uses a lot of oil, so those who prefer less greasy food should be cautious.\nBasic Introduction\nBan Chuan is a specialty snack from the Shanghai-Hangzhou region. This noodle dish is often served with various toppings, with famous varieties including Shrimp and Eel Ban Chuan, Shrimp and Kidney Ban Chuan, Beef Brisket Ban Chuan, and Pork Liver Ban Chuan.\nPreparation\n1. Add cold water to a pot. Once it boils, add lye water noodles. After it boils again, add a bowl of cold water. Repeat this process three times, then remove the noodles.\n2. Rinse the cooked noodles under cold water until they cool down (this prevents sticking and keeps them from getting mushy during stir-frying).\n3. Heat a wok until it smokes, then add salad oil (to prevent the pork from sticking). Add shredded pork and stir-fry until it is 70% cooked. Add dried tofu and yellow chives, and continue to stir-fry until the chives are fragrant. Add soy sauce, sugar, and oyster sauce, and stir-fry. Finally, add the cooled noodles and mix well. A small amount of MSG can be added.\n4. Once evenly mixed, the dish is ready to serve.\n Latest Comments \nUser Comments 0\nPlease Log in before posting a comment Post\n Related Knowledge Articles \nWhat are the famous snacks in Hangzhou?
